4. Minty Pineapple Smoothie
If you love fresh mint as much as I do, you are going to fall hopelessly in love with this healthy summer smoothie, made with some pineapple, fresh mint and a bit of chia.
Ingredients:
– A quarter of a medium sized pineapple (peeled and cut in chunks);
– A few mint leaves;
– A few baby spinach leaves;
– Handful of unroasted cashew nuts;
– Fresh lime juice to taste;
– Half a tsp chia seeds.
Put all these in a blender with half a cup of water, and blend until they become smooth. The chia seeds will help keep everything together, as well as giving it a power boost (this is a superfood for a reason!), and the mint will keep you cool on any summer day.
