2. Easiest Baked Potatoes
This picnic recipe is going to be so easy, you won’t even feel like calling it “cooking” even though the potatoes will be in the stove.
For this you need:
– two pounds of small, new potatoes;
– 2 tablespoons olive oil (even less is OK);
– salt;
– pepper;
– herbs.
Wash the tiny potatoes thoroughly (the peel will stay on, so make sure all the dirt is off). Then cut them up into halves and quarters if they’re bigger, until you have a bunch of potato chunks around 1 inch each. Place them in a bowl, and then pour the 2 tablespoons of olive oil and toss around gently. Then add salt, pepper and your favorite herbs (mine are rosemary and thyme, but feel free to experiment), then place them on a tray lined with a baking sheet. Make sure there’s just one layer of potatoes.
Place them in the oven over medium heat for about 30 minutes, after which take them out and stir them a little with a wooden spoon to make sure they don’t stick. Then add them back in the oven for another 15 minutes, and when they’re done turn off the oven and leave them in there until they cool a little (that way you’re sure they are baked properly).
