1. Cantaloupe Salad
This has to be the easiest refreshing picnic recipe in the world.
All you need is 15 minutes of your time, and the following ingredients:
– one medium cantaloupe;
– half a red onion;
– 1/3 cup olive oil;
– 1/3 chopped mint (the fresh kind);
– ¼ cup balsamic vinegar;
– ¼ cup honey;
– a pinch of salt (if you need specifics, try half a tea spoon);
– a pinch of black pepper (like a quarter tea spoon).
Peel the cantaloupe and cut it up into chunks of about one inch. Sprinkle the onion on top after you’ve cut it into very thin rings, and then add the chopped mint. In a separate bowl make the dressing by mixing the olive oil, vinegar, honey, salt and pepper, and then pour the dressing on top.
This picnic recipe is sweet, it’s a bit salty, it’s easy to make and it lasts in the heat. Keep it in the freezer until right before you leave and you will have one happy picnic crowd!
